I hate cooking, I need precise instructions and I get easily confused if recipes don’t give a set cooking time. I also don’t have the time because of my kids and my husband usually takes over with the cooking. I hate the prep, clean up and being disappointed when things don’t taste very good after spending so much time and money making the recipes. I was always looking for recipes that I didn't have to make a bunch of substitutions, to fit into our way of eating. It was nice that all the recipes fit into my dietary requirements and way of eating. It felt inclusive. Having the time was my biggest challenge to cooking healthy meals and then having the ingredients when I have the time was my next biggest challenge. I found myself having good intentions and buying everything I needed to cook, but then things happen and ingredients go bad because I run out of time or I end up using them for something else just to use them before they go bad. It was really easy, and it had a ton of flavour. I LOVED how easy the recipes are in this book! I don't have a ton of time and I really appreciated how quickly I could make these recipes.
